Meet the Food & Beverage Team
Stephen McLean | Director of Food & Beverage
Stephen McLean joined the Garden of the Gods Collection team as the Director of Food and Beverage in March of 2018. With an extensive leadership background in both private clubs and hotels, he brings a breath of knowledge that will enhance the dining experiences at GGC.
Stephen started his career with Ritz Carlton, working as a banquet supervisor and banquet director for properties in Buckhead, GA and Palm Beach, FL. Both properties housed more than 25,000 square feet of meeting space and generated over $10M in banquet revenue. At the Breakers Hotel in Palm Beach, FL, he was promoted to director of banquet operations within three months of being hired as the assistant and oversaw a $12.5M operations with banquet facilities of over 30,000 square feet. With the PGA National Hotel and Spa in Palm Springs, Stephen was the director of banquet operations, hired specially to reconstruct the entire department. Moving to Mar-a-Lago Club & Trump International Golf Club, Stephen become the Director of Food and Beverage for this exclusive member only social dining club – the only private social club to attain a 6-star diamond award from the Academy of Hospitality Sciences.
In addition to his food and beverage passions, Stephen has been director of club operations for Pelican Bay Foundation in Naples, FL, overseeing four dining rooms, as well as tennis and beach operations in a 6,500-resident community. He was successful in in creating an in-house catering department offering home deliveries which resulted in over $120K in revenues in the first year. His community/club management experience extended to The Bear’s Club, a private community developed by Jack Nicklaus, where he implemented a new culture of service that resulted in increased resident satisfaction. While general manager at Azure Condominiums, he oversaw 101 luxury residences and a marina.
An avid lover of outdoor adventure and all animals, he and his wife, Lynn, cannot wait to settle into their new life in Colorado.
Duane Thompson | Evening Grand View Dining Room Manager
Recently retired from Five Star restaurant the Penrose Room at the Broadmoor Hotel after a 39 year career as General Manager and Maître d’. Duane Thompson’s accolades include being the recipient of The Lifetime Achievement STARS Award from the Colorado Hotel and Lodging Association, becoming the first Manager/Maître d’ in Colorado to receive and maintain, consecutively, Five Diamonds and Five Stars for a Restaurant. Duane’s acute attention to detail, skillful hiring and structured training practices are some of the skills Duane has honed in order to create a successful and loyal team.
Kim Medeiros | Grand View Dining Room Manager
Kim Medeiros grew up and lived in Rhode Island until she moved here with her husband in 1976. Before joining The Club at Garden of the Gods in 1990, she worked for The Broadmoor Hotel. Kim began her career as a server at The Club from 1990 to 2007, when she was promoted to daytime dining room manager. She has three children: Melanie, Jason and Seth. In Kim’s spare time, she enjoys traveling with her husband to visit their children.
Robin Pile | Kissing Camels Grille Manager
Robin is a Pennsylvania native with 14 years of Food and Beverage experience. She attained her college degree from the University of Pittsburgh is in Hospitality Management. Robin has 15-years of experience in the food and beverage industry.
In her free time, Robin enjoys hiking, backpacking, good music, and relaxing with her fur babies and family.
Ronnie Sanchez | Executive Chef
Executive Chef Ronnie Sanchez has extensive four and five-star hotel and restaurant experience in both culinary and the front of house and over 20 years of managerial experience in hotels, restaurants, and private membership country clubs. Chef Ronnie has worked in Spain, Alaska, Hawaii, Peru, Colorado, and New Mexico at varying Executive Chef positions, and he trained under Ferran Adrià, the Three-Star Michelin Chef of El Bulli in Roses, Spain.
Nick Lachman | Executive Sous Chef
Chef Nick Lachman developed a passion for the culinary arts as a young boy. He developed his approach to cooking and menu development from his life experience growing up and living abroad, having traveled through most of Europe and Asia. These life experiences have given Chef Nick a unique understanding of flavor profiles and versatility that are highlighted in his advanced palate. Chef is a Graduate Salutatorian from the Paragon Culinary School, Colorado Springs, Colorado, and he has honed his culinary skills as a sous chef at The Club at Flying Horse, Colorado Springs, Colorado, Chef de Cuisine at Cheyenne Mountain Resort and Country Club of Colorado, Colorado Springs, and Executive Sous Chef at Hotel Contessa Luxury Suites, San Antonio, Texas, prior to joining the Garden of the Gods Collection’s culinary team.
