Greg Howard
Director of Food & Beverage
Greg Howard brings over 25 years of experience in resorts and independent restaurants. He is a graduate of Johnson & Wales University in Providence, Rhode Island, and spent four years at Keystone Resort in both Culinary and Front-of-House leadership. Since 2006, he has owned and operated McCabe’s Tavern. In addition, Greg is a prominent contributor to the Colorado Springs community. He served for two years as President of the Pikes Peak Chapter of the Colorado Restaurant Association and seven years as a member of the CRA state board. Through McCabe’s he has supported numerous local charitable organizations including the Pikes Peak Community Foundation.

Brian Knutson
Executive Chef
Chef Brian Knutson started his career in Scottsdale, Arizona at the Hyatt Regency at Gainey Ranch. While attending culinary school in Denver, he received additional hands-on training in some of Denver’s finest restaurants. He recently came from Memorial Health System where he served many roles including Executive Chef and Operations Manager with a focus on Health and Wellness. Chef Brian has a love of sustainable foods and Colorado specialty products. He is known for blending unique local foods with French Flair.

Jeremy Coleman
Sous Chef
Chef Jeremy Coleman joins us from his previous position as the Catering Manager at Memorial Hospital. He has gained 15 years of experience in all phases of the culinary industry and looks forward to sharing that expertise with the Club. When he is not at work he is usually spending time with his children, a wonderful 6 year old boy and 2 year old little girl. He enjoys hiking, camping, fishing and spending time in the beautiful Colorado outdoors.

Kim Medeiros
Daytime Dining Room Manager
Kim Medeiros grew up and lived in Rhode Island until she moved here with her husband in 1976. Before joining Garden of the Gods Club in 1990 she worked for The Broadmoor Hotel. Kim began her career as a server at the Club from 1990 to 2007 when she was promoted to daytime Dining Room Manager. She has three children; Melanie, Jason and Seth. In Kim’s spare time, she enjoys traveling with her husband to visit their children.

Trish Pino
Kissing Camels Grille Manager
Trish Pino has more than three decades of hospitality experience, most recently as the food and beverage manager at Colorado Springs Country Club. She has spent her career building teams focused on excellent service and Member satisfaction. Trish has always loved Colorado Springs and returned here in 1996 after spending three years in San Antonio, Texas. When not working, she enjoys spending time with her three sons and daughter-in-law, cooking, entertaining, gardening, and learning anything new. Trish is thrilled to be at Garden of the Gods Club and looks forward to getting to know our Members and guests.

Frank Orten
Restaurant Manager
