Erik Pedersen
Director of Food & Beverage
Erik Pedersen has more than 15 years of experience in the hospitality industry. Most recently, he served as assistant general manager at Hiwan Golf Club in Evergreen, Colo., where he was responsible for all aspects of club operations. Erik has a Bachelor of Science in business and computer information systems from Colorado State University. He joined the hospitality industry in 1996, when he started working seasonally for Hiwan Golf Club as a member of the golf course grounds crew. As the years progressed, Hiwan gave Pedersen opportunities to work in a variety of other roles, including pro shop field supervisor, bartender/server, and clubhouse manager. Erik was born in Boulder, Colo, and grew up in Evergreen, Colo, where both of his parents served as teachers. He also has a younger brother. Erik married his high school sweetheart. When not at the office, he enjoys golfing, skiing, and running. He is also the vice president of Bootstraps, Inc., a non-profit that provides scholarships and interest-free loans to students from the Evergreen/Conifer area to help them pursue their goals of higher education.

Steven Weber
Executive Chef
In 1998 Steve successfully completed advanced courses at the Culinary Institute of America, where he focused on individual European pastries, confectionery work, and advanced cake decorating techniques. Steve refined his culinary skills in Europe, where he served as Executive and Personal Chef to the Supreme Allied Commander for nearly 10 years at the Chateau Gendebien in Mons, Belgium. In 2009, Steve retired from the U.S. Army after 21 years. He is coming to us from his most recent role as Executive Chef at the Colorado Springs fine dining restaurant Walter's Bistro. He won the "people's choice" award for Best Dessert at the 2012 Zonta Glass Slipper Ball. Steve is an avid golfer and tennis player. He and his wife Beth have lived in Colorado Springs for three years and have three adult children, Sara, Lindsay, and Matt.

Carl McCartney
Executive Sous Chef
Carl brings more than 30 years of culinary experience to Garden of the Gods Club's Food & Beverage team. After graduating from the New England Culinary Institute in Vermont, Carl honed his culinary skills at a variety of food establishments, including Winter Park Resort. Carl considers himself an artist at heart, and he enjoys the creative side of cooking. Outside of work, Carl keeps himself busy snowboarding, playing bass guitar, and golfing.

Nick Stendebach
Executive Sous Chef
Chef Nick currently resides in Palm Desert, CA and has just finished his sixth season with Toscana Country Club. As a graduate of the New York Restaurant School, he brings nearly a decade of culinary experience to Kissing Camels Grille for his second season. Nick's achievements also include an Associate's Degree in Fine Arts and a Bachelors of Science Degree in Graphic Design from the Fashion Institute of Technology. His background in fine arts, combined with his passion and joy for cooking, helps him create art that everyone can enjoy eating. Prior to cooking for Kissing Camels Grille, Nick was the Executive Chef at Mountain View Country Club in La Quinta, CA and also the Executive Chef at Rock Creek Cattle Company in Deer Lodge, MT. He has also worked for the Miramonte Resort & Spa, Indian Palms Country Club, and several high-end restaurants in New York City. Nick also enjoys photography, soccer, hiking, mountain biking, fly fishing, and spending time with his three boys Alexander, Logan, and Wyatt.

Kim Medeiros
Daytime Dining Room Manager
Kim grew up and lived in Rhode Island until she moved here with her husband in 1976. Before joining Garden of the Gods Club in 1990 she worked for The Broadmoor Hotel for 22 years. She has three children; Melanie lives in Providence, Rhode Island, Jason lives in Los Angeles, California, and Seth lives in Denver. In Kim’s spare time, she enjoys traveling with her husband to visit their children.

Garfield Humpal
Evening Dining Room Manager
Garfield Humpal began his career in the hospitality industry in Santa Barbara, Calif., as a bus boy. After working in various restaurant positions, he eventually became General Manager of the Harbor Restaurant and Longboards Bar and Grill for 10 years. After that, Garfield worked as a senior manager at the Cheesecake Factory, where he had the opportunity to be involved in store openings and staff training around the country. For the last four years, Garfield has been the lead captain in the Penrose Room at The Broadmoor, the only five-star, five-diamond restaurant in Colorado. He enjoys hospitality and making people feel welcome and at home. Garfield is an avid fly fisherman, enjoys whitewater rafting and hiking, and is actively involved in his church. "I look forward to getting to know all of you," Garfield says. "Please let me know if there is anything I can do to make your experience here more enjoyable."

Trish Pino
Kissing Camels Grille Manager
Trish has more than three decades of hospitality experience, most recently as the food and beverage manager at Colorado Springs Country Club. She has spent her career building teams focused on excellent service and Member satisfaction. Trish has always loved Colorado Springs and returned here in 1996 after spending three years in San Antonio, Texas. When not working, she enjoys spending time with her three sons and daughter-in-law, cooking, entertaining, gardening, and learning anything new. Trish is thrilled to be at Garden of the Gods Club and looks forward to getting to know our Members and guests.
